Hello~ It's the time of the year again to play with lanterns and get busy over buying mooncakes, for your family, your friends or even your clients. For this year's Mid Autumn Festival, why not go for a change and make yourself some Mooncakes? :) You can share this home-made delicacy with your family and friends. Best thing is, you can be assured that there are no preservatives :)

Chocolate, Greentea & White Lotus Snowskin Mooncake.

Actually, making Snowskin Mooncake is as easy as playing with Playdough - that's what I usually tell people who asked me whether is it difficult to make. Just make sure you have the correct ingredients, and you're ready to go make a few boxes of them :) You should be able to get all of the required ingredients from Phoon Huat.

Here's the recipe for you:

Commercial kou fien.
Ingredients for Snowskin
100g commercial kou fien (糕粉)
100g icing sugar
40g shortening
150ml fresh milk or flavoured milk (choose a flavour that complements your mooncake's filling)

Filling
500g White Lotus paste (莲蓉馅) / Chocolate paste / Black Sesame paste / Green Tea paste / Durian paste (choose your preferred)

Note*
You should be able to find ready-made fillings from Phoon Huat or other confectioneries.

Equipment
Mooncake mould to shape the mooncakes.


Directions



1. Combine filling together and scale at 20g each portion. Round them and set aside.




Separated portions of rounded dough.
2. Sieve commercial koh fun and icing sugar into a big bowl. Add in shortening first and combine evenly. Next, add in fresh milk and knead well. The dough should come to a consistency that doesn't stick to your fingers that much. Scale and make them into portions of 30g. Round them and set aside. This will be your snowskin.



Seal up the opening to cover filling.
3. Flatten a rounded portion made in (2). Place in a filling and slowly seal the opening to cover the filling completely. 



Press dusted dough into the mould.
4. Dust some kou fien lightly on the sealed dough in (3) evenly, and press the dusted dough into a mooncake mould. 



Remove the imprinted mooncake.
5. Knock out the imprinted mooncake. Repeat the process.




6. You may buy some boxes that comes with separate compartments to keep your mooncakes. Put the mooncakes in the fridge to chill before serving. 




Azu-nyan: "Please consume your mooncakes within 5 days, from the day you make them."


Azu-nyan: "Snowskin Mooncakes become drier the longer you keep them in the fridge!"
